At the beautiful unvarnished wooden counter nestled within the former Kan’in-no-miya Villa, which has been a part of the changing seasons of Hakone for many long years, sushi chef Masahiro Yoshitake says, “as a sushi craftsman fascinated by the profoundness of sushi, an integral part of Japanese cultural cuisine, I work to hone my craft daily, which stems from my desire to communicate the ‘oneness of the world of nigirizushi’” as he serves his omakase course infused with this wish. The beautiful course is comprised of 17 items starting with an appetizer. In addition to locally-brewed Kanagawa sake, champagne and wine from around the world are also served to pair deliciously with sushi.

Gora Kadan
