Quick and Easy Chicken Fried Rice: A Flavorful Homemade Delight

Making chicken fried rice is a great way to use up leftover rice and enjoy a flavorful, satisfying meal. Here’s a simple recipe to make delicious chicken fried rice:

Ingredients:

  • 2 cups cooked rice (preferably cold, day-old rice works best)
  • 1 cup chicken breast, diced
  • 1 tablespoon vegetable oil (or any cooking oil)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Prepare the Ingredients: Ensure all ingredients are prepped and ready to go. Cook and cool the rice beforehand. Dice the chicken and chop the vegetables.
  2. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
    • Add the diced chicken and cook until it's no longer pink and is cooked through, about 5-7 minutes.
    • Remove the chicken from the pan and set aside.
  3. Sauté Vegetables:
    • In the same pan, add a bit more oil if needed.
    • Add the chopped onion and cook until translucent, about 2 minutes.

  5. Combine Ingredients:
    • Add the cooked chicken back to the pan.
    • Add the cold rice, breaking up any clumps.
    • Stir everything together to mix evenly.
  6. Season the Fried Rice:
    • Add soy sauce, oyster sauce (if using), and sesame oil.
    • Stir well to coat all the ingredients in the sauces.
    • Season with salt and pepper to taste.
  7. Finish and Garnish:
    • Cook for an additional 2-3 minutes, allowing the rice to get slightly crispy if you like.
    • Garnish with chopped green onions and sesame seeds if desired.
  8. Serve:
